If you remember, my frosting looked like a soupy mess.
I spent two days experimenting with it.
I tried freezing it. Fail.
I tried adding more coconut flour.
Then powdered sugar.
Then corn starch to thicken.
A day later I remembered that corn starch thickens when it's warm, so I gently simmered the frosting and added more soy milk powder and a bit more coconut oil, which is what Babycakes herself recommends for troubleshooting unset frosting. I simmered until it was about as thick as heavy cream and then let it cool for an hour and set in the fridge.
Six hours later I managed to have set frosting!
It tasted and had the consistency of cream cheese frosting so it is not too stiff.
I even managed to halve a fat cookie and make my healthy GF dinky doozie after all!
Maybe I was cookie deprived because I hadn't baked any in a while or maybe its because I put so much effort into this batch but these cookies are seriously good! I love that I can eat a fat cookie smothered in frosting and not feel yucky but actually feel good.
Good healthy fats, nothing that makes me sick or makes me feel bloated or sugar crashed.
