Recently I wrote about how excited I was to try out a recipe from my copy of the Babycakes bakery cookbook.
Well this weekend I decided to try out the sandwich cookie recipe with vanilla frosting.
That's two separate recipes: the cookie part and the vanilla part.
I made the vanilla frosting late in the afternoon yesterday and set it in the refrigerator to set overnight.
This afternoon I tackled the cookies.
The recipe is pretty straightforward and easy to execute but the results were not what I expected.
For one the dough came out like wet sand and it was hard to scoop and flatten the cookies like the instructions call for. Also it was very "juicy" and oozed coconut oil, which also made it hard to shape them too; my hands were dripping in oil and so were the cookies.
The below picture is after I pulled the first tray out of the oven but you can kind of see the pools of oil.
I'll be honest, it was a little bit icky and I don't know what I did wrong or if this is just how the dough is supposed to be.
Don't get me wrong, the cookies are pretty tasty and baked really well with crispy edges and soft middles, just how I love my cookies. Mine came out a little thick though since instructions say to flatten them a bit but I didn't know how much to flatten them or how much they'd expand.
Next time I make them I will flatten them a bit more since they don't seem to grow too much while baking.
Also the coconut oil was still a bit warm and melted some of the chocolate, giving the cookies a darker color than I think the pictures show.
Pretty much my only complaint is how oily they are. I measured the coconut oil exactly how I was supposed to and in the measurements required so I don't know what happened or if this is how the recipe is supposed to be.
Also, the baked cookies are pretty greasy. Again, I'm just wondering if this is normal or if they are supposed to be drier.
Coconut oil is pretty pricey ($7.99 for a 14 oz. jar) to see all the precious oil oozing out and pretty much getting wasted but I wonder if reducing the amount will eliminate this or how it will affect the recipe.
The cookies were not my bake fail however; that prize goes to the vanilla frosting!
After being in the fridge for about 10 hours I thought it was all set and ready to fill my cookies but when I opened the container all I found was milky-ness.
To my dismay the frosting had not set at all!
Again I don't know what I did wrong since I followed all the instructions and measurements.
Sometimes that just happens though.
I don't plan on giving up however, I think I'll give these recipes at least one or two more tries before I quit. And since the ingredients, particularly the coconut oil, are kind of expensive I unfortunately have to wait a bit to fit the ingredients into my grocery budget.
It's kind of disappointing since I was already dreaming of my gluten-free dinky doozies, but at least I have some healthy, gluten-free cookies to drown my sorrow with!
**Update** Hooray! I found a Babycakes Cookbook FAQ page that has troubleshooting techniques! I don't know if this will fix my frosting but we'll see.
I also found out while reading it that for most recipes I can substitute the coconut oil with something cheaper like canola (except for the frosting recipes) so that's one way to make the stuff a bit cheaper. I will definitely be trying that in the future!
