"Brus-kehtta"!
Butter and toast your favorite gluten-free bread. (I used Glutino Fiber Bread because I like the taste, texture and it toasts very well..)
Once toasted, spread some pesto on the top of each slice. (In a pinch you can also use olive tapenade.)
Thinly slice tomatoes and place on top. Thinly slice or grate your favorite mozzarella and place or sprinkle on top.
Slide your tray into the broiler of your oven or toaster oven until the cheese bubbles and turns a golden brown.
Take out of the oven or toaster oven and cut diagonally.
Right before you eat/serve it, drizzle olive oil on top and sprinkle coarse salt and freshly ground pepper. Otherwise it gets soggy! That's why all these pictures are taken before the olive oil.
Optional: add chopped fresh basil, rosemary or mint leaves.
Then enjoy!
