Today I thought I'd share something yummy and delightful in the form of these chocolate chip oatmeal cookies my mom made a little while back.
The recipe is basically this chocolate chip oatmeal cookie recipe I posted about last year with a few omissions/substitutions with what we had on hand.
I had been craving these cookies for a few weeks and since I wasn't feeling too well my mom's batch perked me right up!
Basically she just eliminated the grated chocolate bar from the original recipe and used both mini and regular sized chocolate chips.
I was reading a Yahoo article (that I can't find now!) about baking tips and it that said grated chocolate actually helps the cookie spread out and attain that desired chewy-ness. I think there must be some truth to that since my mom's batch of cookies, in which she omitted the grated chocolate bar, didn't spread! She had to scoop and shape each one.
That Yahoo article also mentioned to get a "cakey" cookie to turn up the heat to 400º, since heat will help the cookie rise faster, which achieves that "cake" consistency.
For a chewy cookie that spreads and gets those deliciously chewy-crispy edges you want to bake at a lower temperature, around 350º, since the low heat helps the cookie spread and of course the tip to use grated chocolate to help the cookie spread as well.
