After doing a little research, I found out morning glories (like the one I had in Fredericksburg) typically have most of the following ingredients: apple sauce or apple butter, canned crushed pineapple, dried fruit (raisins, cranberries), nuts (pecans, walnuts), seeds (sunflower, pepitas), a shredded veggie (carrot, zucchini), coconut flakes.
Pretty good wholesome stuff I think, especially if you add a bit of flax meal.
I won't post the recipe because a) it was a bit of a flop and came out looking like rocks since b) it was a bit of an experiment with a fair amount of substitutions because c) I adapted it from a published recipe and I don't know the copyright policies about posting a fairly altered recipe based on another recipe (I added a bunch of stuff and substituted some other stuff and the flour mix.)
Above on the left is the picture before baking and the right is the picture after baking so you can see they baked exactly how they were spooned into the cups without rising at all.
While they taste pretty good, they came out looking like drop biscuits. I'll be honest and say that they are a bit rock-like since they are so lumpy looking and dense, but they are soft and edible.
Since they are only "okaaay" and I made them partially so that my Mister can grab a quick breakfast bite, I promised him that the next muffins would be a bacon cheddar variety.

Also since they were a wee bit dry and needed a bit of sweetness, I melted the last bit of lingonberry jam (jelly?) on the stovetop and spooned it on the tops and with a brush spread it out evenly.
This lingonberry jam is really good and did the trick nicely! I found it on clearance at Sprouts and I haven't seen it since. I think but I've only ever seen lingonberry jam at Ikea of all places, so next time I go to Ikea, whenever that ends up being, I'll try to remember to pick up a big jar of it.
