How fattening or healthy they are depends completely on you.
Load it up with meat, lots of cheese and sour cream and it's not so healthy.
Keep it simple and it can be a surprisingly filling meal or even a quick snack.

A quesadilla is basically a tortilla with melted cheese. Other fillings depend on what you have in your fridge. I used two gluten-free corn tortillas (remember to check your label!) and cut the assembled quesadilla into wedges.
Alternately you can use one tortilla and fold it in half.
(Do I really have to explain how quesadillas are made? I don't know...)
I used a slice of Hormel Natural Choice gluten-free turkey and the last leaves of baby spinach just starting to wilt in my crisper.
Normally I make it vegetarian and don't put meat in it, but this was another refrigerator item that was down to it's last serving and nearing it's expiration date so waste not, want not right?
Another good thing about quesadillas: as I have demonstrated you can throw anything in them, in particular things that are a few days away from going bad. Heck, you can throw everything but the kitchen sink in them so long as you keep it thinly sliced (it's easier to handle.)
I also scooped on some delicious, creamy avocado. Remember that avocado has all those good fats that help you feel full, are good for your skin and also just tastes really, crazy good with melted jack cheese!
