This is a dinner I made recently: lobster tails + assorted roasted veggies.
Surprisingly quick and easy!
The lobster defrosted while I cut up all the veggies, then steamed while the veggies were roasting and it all ended up being ready at the same time.
First I cut up all my veggies: eggplant, potato and brussel sprouts. The sprouts I cut in quarter wedges and the potatoes and eggplant in half then in slices.
Then drizzle olive oil and sprinkle on some salt, pepper and chopped rosemary. Baked @ 350° for about 20 minutes.
Meanwhile I steamed the lobster tails about 15-20 minutes. I've never made them before so I made sure they were cooked through.
When that was finished the veggies were about done too.
Instead of butter sauce I just sprinkled everything with lime juice. I think a little lime juice and a dash of salt and pepper make everything taste gooood!
However I think I just crossed lobster off my list of things I am willing to eat.
First both my husband and I thought it is a little unnerving to me to eat an animal carcass while it is still in its shell!
And also, you know that vein that shrimp have on their back that you remove before eating because it's really the shimp's poop filled intestine? Lobsters have the same thing only much bigger! The thought of eating something that cooks while poop is still inside its body is kinda gross!
But one good thing is the veggies with the olive oil, rosemary, salt and pepper and lime juice. Seriously steal that idea!
