Recently for dinner I had no idea what to make. I wanted something "pizza-y" but had no crust or bread. What I did have was one Food for Life brown rice tortilla (remember this?) that was unfortunately cracked in half.
So I made a make-shift thin crust pizza by smoothing a thin layer of tomato sauce and shredding some cheese, popped in the oven until the cheese got nice and bubbly.
It wasn't too bad actually but I could've folded it in half to make two quarter quesadillas. Not crispy and crunchy like I though it would, it was kind of chewy but not soggy.

Pizza of course always goes with a big green salad!
Spinach greens are hiding under cherry tomato wedges, strawberries, blueberries, sauteed green beans and walnuts.
For dressing I debated creamy or light and light won out. A drizzle of olive oil, the juice of half a lime and some salt and pepper finished it off nicely.
