Well I will fill you in a bit later about my brief stay-cation but for now let's get back to some easy gluten-free food shall we?
When I saw this package of Punjab eggplant I knew I had to try it because I love eggplant like nobody's business. Usually I eat it grilled or roasted so this looked like a mouthwatering alternative to my usual.
Truth be told, I'd rather find a recipe that just grab a packet of something pre-made but it also seemed like a good way to try something new without all the work.
Plus look...gluten-free! So of course I had to try it out so I could write about it here!
The eggplant is completely prepared, all you have to do is heat it up. So I dumped the packet into a microwave-safe bowl and warmed it up.
This is what it looks like. Kind of like a big blob, but it is so deliciously aromatic.
I'm not sure of the traditional ways you can serve or eat this but I had some on top of left-over rice, as recommended on the package.
I also mixed the eggplant with about a quarter of a sweet potato that somehow was left behind in the fridge and again the rice. I found that it added some sweetness and diluted the spiciness so if you find that the eggplant by itself is too spicy, try that trick. Since it was just the one potato I nuked it in the micro for 4 minutes wrapped in a damp paper towel.
To say that this stuff is good is an understatement and quite frankly not descriptive enough.
It is sensory experience. So savory and aromatic (it really smells so good!) and just spicy enough for me.
I could have eaten the whole bowl by myself but at the same time it was so mouthwateringly delicious that I wanted to parcel it out so it would last longer.
Punjab eggplant would also be really good as a dip with some sort of gluten-free flat bread cracker or as a sandwich spread or just eating it alone in my case.
So this gluten-free food gets a huge thumbs up for me for being easy to prepare, delicious, and for being a more nutritious vegan/vegetarian option to other ready made foods.
