This was one of those dinners where I just grabbed what I had and put it together and it actually ended up good enough that everyone liked it.
For the Nori wrap I just used the kind that you use for sushi. It was left over from summer and since it's cooler now we don't really plan on making more.
Hint: Left over Nori can also be cut into strips and added to your chicken soup!

Same with the fish. I had picked up some frozen Alaskan Char on sale a few weeks ago and didn't really think about it until dinner time. I actually defrosted the char first and then I had the idea to wrap them in Nori.
Alaskan Char looks and tastes like salmon but it's lighter both in color and flavor; you can prepare it just about the same.
For the inside of the wrap I used a creamy dill sauce loosely based on this recipe with a few substitutions for what I had on hand:
- instead of mayo I used 3 heaping tablespoons of fat-free greek yogurt
- lime juice from one key lime
- some parmesan cheese
- a few shakes of dried dill, garlic salt, regular salt and freshly ground pepper to taste
(I almost never used exact amounts of spice. I prefer seasoning to taste since everyone's tastebuds are different.)
I cut up the char with the skin on into smaller pieces, about 4 oz each, and placed one on a sheet of Nori, skin side down. I put about a spoonful of the creamy dill, spread it around the surface and then placed the fish cream side down, or skin side up. When you fold the pocked around the fish, the seam is going to be on the skin side, which you want on the bottom so that the nice flat part is on top.
When you fold it, think of an envelope.
With the fish skin side up, fold up one corner of the Nori sheet...
Then fold in the other two corners so they over lap. Then fold down the top flap of your Nori "envelope"...
And place in a foil lined baking pan, seam side down.
I had about 6 pieces which I baked at 350ยบ for about 20-25 minutes, so cooking time might vary from that.
I served it with rice and spinach salad. The rice again was just some rice that I had in the pantry. I don't even know what kind it is, I think it was sushi rice!
But serve with whatever you like! :)
