Another quick-together dinner.
Carnitas is spanish for pork, and it was left over from some other dinner long ago that we had too much of and froze.
The veggies were just random veggies we had, fingerling potatoes, broccoli and asparagus sauteed together then salted and peppered.
Since I had the pesto I wanted a pesto pasta. I still had one bunch of kale so I cut it up and added it to the noodles while they boiled. It turned the water a weird gray/purple-y color but the kale actually cooked through.
Then though better of using all the pesto in the pasta and mixed only a few tablespoons and a 14.5 oz can of unsalted tomato sauce and salted, peppered and garlic'd to taste while the kale pasta was still piping hot.
For drink I made Red Zinger!
I really love Celestial Seasonings teas and love the artwork. When I was young my mom used to make me Sleepytime tea before bed to help me sleep and I always loved the bear.
Then when I got married, we went to Colorado on our honeymoon and stopped by the factory for a free tour. It was fun so if you ever get the chance, go! If you love the artwork on the boxed you'll love their Cafe!
Anyway, back to the meal, I made this tea cold brew, which you can do with all of their teas. I only sweetened it with a little bit of honey but sometimes I don't sweeten it and it tastes just fine and fruity.
I really love that Celestial Seasonings has actually made the effort to label some their teas gluten-free because not all of them are. It is so easy to just toss a box of tea into your cart or brew yourself a cup without reading the label because the logic is "It's tea! How can it have gluten?!?"
Well some of the more seasonal teas actually contain barley, which is not gluten-free. From my experience most of the regular teas are safe, it's usually those seasonal ones you have to look out for.
Just as a safety measure though, always double check any and all tea and drink labels yourself, because you never know when a formula will change and because it's always better to be safe than sorry!
