Yesterday I wrote about Schär crisps, which are a new-to-me European brand of crackers.
In my review I mentioned that since they are lightly salted they could easily accommodate both a savory and sweet palate.
Here is my version of a sweet snack:
2 crisp crackers, spread with organic peanut butter and topped off with fresh sliced peaches. Since the peaches were not organic I peeled them.
I used this Laura Scudder's smooth organic peanut butter. I prefer peanut butters that don't have added sugar. Even though you have to stir it like most natural peanut butters, it has a good nutty flavor that is fresh and unadulterated. But I didn't miss the sweetness since the peaches were plenty sweet.
For those of you worried about calories or that think peanut butter is fattening, choose a natural peanut butter that doesn't have added sweeteners and eat only the recommended serving, usually about 2 Tbsp. I can't stress enough the importance of recommended servings but please remember that plant fat is still better for you than animal fat.
What I love about a snack like this is that it's soo many things: quick, easy, gluten free, kid friendly, vegan, healthy...etc!
It just goes to show you that part of the "secret" to quick and easy healthy and gluten-free eating is having a well stocked pantry and fresh food, and with that you can throw together practically anything!
