Tinkyada Pastas is one of my favorite gluten-free products not only because they make a quality product but because they actually deliver what they promise!
Tinkyada's cute little bunny mascot touts that this pasta will yield a consistent texture that "won't get mushy" and can even withstand a tiny bit of over cooking.
Those facts make this pasta great for oven baking dishes such as lasagna or baked ziti because it does withstand that double cooking both on the stove and in the oven.
If you're gluten-free you might have tried "pasta substitutions" like subbing in the lighter Asian noodles in dishes like spaghetti. But this is nothing like that; the texture when cooked is actually filling and quite hearty.
This product is also notoriously "goof-proof".
One trick that I've noticed when cooking gluten free pasta is to use enough water and a large enough pot when you boil your pasta, especially rice sticks which tend to stick together. But even when you forget to use a bigger pot or accidently boil for longer than the recommended time, this pasta for the most part still comes out palatable and with a good chewy texture. (I would say it's probably even more forgiving that regular wheat pasta!)
What I like best is that while they make white rice pasta, most of these pastas that I've seen are made with brown rice. Maybe that's what makes the noodle heartier?
They also have organic versions of most of their pastas, which is always nice.
I've seen Tinkyada pastas in health food stores and regular grocery stores. However the grocery store has considerably less varieties in stock than the health food stores.
Also, I have yet to find the grand shells in any store! I've been dying to make a gluten-free version of stuffed shells.
