Cross your fingers for a snow day tomorrow!
Contrary to the freezing temperatures lately I've been craving fresh green salads.
I know it goes contrary to the temperature where curling up with a warm bowl of soup is comforting, but after doing a little gardening homework I found out lettuce and greens are actually in season in the cold months!
I have been growing a little purple kale and Brussels sprouts and sure enough after the cold snap hit they seemed to grow more and the little Brussels budded.
So I took the craving and ran with it, making myself a chopped "spoon" salad a la MJ.
I chopped some tomatoes, broccoli and a few other things into small pieces. I actually didn't have too much lettuce but I added it in too. Quick note: lettuce is much easier to "chop" if you simply snip it with kitchen shears!
I also threw in some chopped sweet potato and Brussels sprouts that I had, after roasting in the oven of course.
Drizzled with olive oil and sprinkled with goat cheese crumbles, walnuts, cranberry raisins, salt and pepper.
I know it sounds crazy with the cold weather going on but this is really hits the spot!
