For those days when you want something more involved than frozen waffles but less messy than pancakes.
For my french toast I used:
- 1 slice of Glutino Fiber Bread (I used the end slice, which was thicker.)
- 1 egg
- a splash of almond milk, about 1/3 cup
- pumpkin spice (or cinnamon)
- agave nectar (or use syrup of your choice or powdered sugar)
- optional: fresh fruit, chopped nuts
Warm a skillet with about a tablespoon of canola oil.
In a bowl whisk the egg and almond milk together. Slice your bread into 4 strips and dip into the egg/milk mixture, coating evenly. When the oil is hot, lay your strips in the skillet and sprinkle with the spice of your liking.
I didn't put the spice into my egg/milk mixture because I wanted to make scrambled eggs from it and I didn't have another egg. But alternately you can mix your spice in with your eggs and milk.
So let the strips cook until golden and crispy for about 2 minutes and turn them, sprinkled them with spice again and let cook the same way on the other side.
They taste really great with some agave nectar poured on top!
You can also add your chopped nuts or fresh fruit on top or on the side.
When the strips were done I just wiped my skillet clean and scrambled up my eggs. They came out a little pale because of the almond milk but they were palatable.
This breakfast goes really good together with a handful of something fresh like blackberries to temper the sweet french toast.
Even though this is a meal for one, you can easily double or triple it for more people. It's also ridiculously quick and easy to take care of everything at the same time so you can play short order cook for 20 minutes.
