Continuing yesterday's posts, today features another Fredericksburg gluten-free goodie from Beat the Wheat bakery.
The previous night we had a delicious gluten-free dinner of thick and hearty soups and a giant cookie.
We stopped there for breakfast but unfortunately they don't serve it. We did get there in time to sample a piece of a fresh baked gluten-free loaf, yum!
Instead of breakfast we got provisions for later in the form of this Morning Glory muffin.
Like the cookie this is a generous muffin, as big as my two cupped hands.
Baked on top and into the muffin are nuts, pepitas (pumpkin seeds), and cranberries.
I had actually gotten this exact muffin the night before but I put it in our lunch box which was filled with melted ice and the darn thing got waterlogged and ruined! That's user error for ya!
So I vowed that the next morning I would have my muffin.
Like the free sample we ate, this muffin has an excellent texture. I don't know how they do it (well actually I do! The baker we talked to said she finds that she has to use more water in gluten-free recipes. File away in my brain for later!) but the texture of their bread and muffin is so airy and light and doughy!
It is still chewy and not at all dense and crumbly. And, big plus, it holds up well to travel (excluding of course, putting in a lunch box full of melted ice!)
Since I still needed a protein based breakfast we headed to this little nook, the Rather Sweet Bakery & Cafe.
Of course nothing gluten-free in their bakery counter, but we only had an omelette and coffee!
It's really a quaint, homey, cozy little spot though. And warm!
