It was one of those days where I was hungry, I wanted a sandwich, but I had none of the regular sandwich ingredients. Boo.
Well sometimes you gotta improvise.
No mayo!
Well avocado is good for spreading between two slices of Glutino Fiber Bread.
No cheese or turkey.
Well wilted spring mix salad will have to do. Arugula and spinach wilt down nicely with a little olive oil and salt. Throw in some sliced zucchini squash in there too and let it get all soft.
For something fresh slice up some grape tomatoes and you're done.
A slippery sandwich indeed which requires extra napkins.
Bonus points for the vegan sandwich fixings.
Don't forget the chips!
These chips from Good Health Natural Foods are very delicious. And gluten-free!
The Chilean lime flavor is very subtle and tasty, not chemical sour like some lime flavored chips. The avocado oil complements the sandwich.
I even think they taste a bit better when I can enjoy the whole bag by myself. (At least that's what I sometimes tell my hubby.)
