This post was rather challenging since everytime I've tried to type "apple crisp" I type up "apple crips"! Which of course makes me think of the dessert as street gangs...
I don't know what's wrong with me because when I did the veggie sandwich post I was also kept typing sandwhich!
Anyway, crisps are so quick and so easy to make gluten-friendly. You can control the amount of sugar by reducing substituting natural alternatives and you can make it from practically any seasonal fruit that's available.
I had a huge craving for something sweet, apple-y and fall flavored so it was apple crisp to the rescue.
I peeled and sliced up 3 organic Granny Smith apples and 3 organic Red Delicious. I like the tartness of the Grannies but also the sweetness of the Red Delicious because just the Grannies are too sour for me. I Jonathan or Pink Lady apples work also.
In a bowl I added a generous amount of honey instead of sugar, the juice of one lime, the spices cinnamon + ginger + pumpkin pie spice and about two handfuls of gluten-free all purpose flour.
Honey doesn't release as much juice from the apples as much as granulated sugar so maybe next time I'll add more lemon to compensate. I also want to try to sweeten it with agave nectar.
For the crust I used these gluten-free ginger snaps from Midel. It's a really great dry cookie that crumbles well and stands up to juicy fruit.
I tossed a handful (about a cup) of those in my lil' food processor. But to kind of fill it in more I also added a couple of handfuls of gluten-free all purpose flour and gluten-free corn flakes for crunch.
I pulsed it with about 3-4 tablespoons of butter until it was the consistency of damp sand.
I did not sweeten the crust because I was already using cookies and corn flakes.
Baked for about 20-25 minutes at 375º. (Sorry for the strange shadows in these last two pictures; I had no idea they were there until I uploaded the pictures!)
It was slightly sour and not as sweet as I wanted but I think with my planned tweaks will fix it.
I'm not going to lie, I ate almost the whole thing myself and it was delicious!
You can refrigerate it but I recommend not eating it cold and instead warming it up a bit in the microwave. Also try it with a bit of sour cream, yum!
